We’re having Easter at our house this year and we’ve been trying to come up with a Paleo friendly meal that everyone will enjoy. This is what we’ve come up with so far:
- Beef roast
- Brussels sprouts
- Velvety Butternut Squash
- Roasted sweet potatoes (for anyone that doesn’t want squash)
- Roasted carrots
And I’d like to come up with some kind of Paleo dessert.
Eggs scrambled with green peppers, onions and mushrooms, roasted sweet potato, salmon cake and a mix of strawberries and blueberries sprinkled with unsweetened coconut.
Leftover spaghetti squash and meatballs.
Earlier in the day, I sent Dane a link for PaleOMG’s Shrimp and Jalapeno Sweet Potato Biscuits. He agreed that they looked good and asked if I wanted them for dinner. Yes, please!
We served them with tilapia and a mix of zucchini, red peppers and onions topped with bacon.
I loved the “biscuits!” We topped ours with coconut butter. So good.
