This is me – I can’t tell enough people how good I feel.

I can’t believe we’re almost done!! Now, I’m starting to get anxious to step on the scale and see how much weight I’ve lost. At the beginning of Whole30, I didn’t have any real weight loss expectations. I figured we would lose but the promise of getting over cravings, eating real food and developing a healthy relationship with food was really appealing to me. So, even if I’ve only lost 2 lbs in 30 days, everything else that I’m taking away from this is completely worth it.
For breakfast, we had eggs scrambled with mushrooms & green peppers, roasted sweet potatoes with leftover corned beef along with pineapple, blueberries and strawberries sprinkled with unsweetened coconut.
Lunch was a leftover burger crumbled over asparagus and beets.
Dane wasn’t home when I got home from work, so I made dinner. I know, twice in one week! I got the idea of brussel sprouts and ground pork from Kristen.
I received a suggestion on Instagram to add some diced prunes to balance out the bitterness of the brussels but I didn’t have any. Kristen said she used some maple mustard sauce to really bring out the flavor which sounded great, too. I cooked mine in ghee and added some salt, pepper, garlic powder and a touch of cayenne pepper. We both thought it was good.
Kim came over to watch the Biggest Loser finale and tried a brussel sprout for the first time! She liked it as well. Even though there were spoilers all over the internet immediately following the finale, I won’t talk about it yet in case you recorded it.
