Happy Weekend! This is our last weekend on Whole30 and I must say, it’s gone by pretty fast. Before we started this, we agreed that we would make an attempt to eat at home most of the time just because we knew it would be easier to know exactly what we were eating. Plus there aren’t any temptations around. The fact that it’s Bike Week has also made it much easier to stay in on the weekend. (This Sunday is the last day)
I haven’t really thought about the scale much which is surprising considering I used to weigh every single morning. I am looking forward to weighing in next week to see how we’ve done, although I don’t really have a number in mind. This has been about so much more than just weight loss for me. Even if I didn’t lose anything (I know I have by the way my clothes fit and the comments I’ve gotten), I’ve never felt this good. Putting less crap in your body really does make a big difference.
For breakfast we were going to make Jicama Home Fries but it turns out I didn’t see a very important step in the recipe that involved soaking them in the crockpot for 12 hours. Oops. Dane improvised and made some sweet potato hash instead.
Lunch was leftover hot plate ingredients from the night before.
In an attempt to make Friday’s a little special we’ve had steak every Friday. Dane’s favorite is a ribeye and I’ve always been a fan of a filet. Last night was the first time we made filet at home and wow was it good.
The filet was so juicy and flavorful. We roasted the beets we got at the farmers last weekend and sauteed asparagus with tomatoes and walnuts.
I definitely liked the fresh beets way better than the canned! Such a delicious meal.
