Whole30 – Day 13

One thing I’m loving about Whole30 is it’s forcing us to be more creative with our meals.  I don’t think we’ve had the same dinner twice, which most likely wouldn’t have happened before.

We changed up breakfast a little and it was SO good.

Breakfast

IMG_1553 2 eggs, avocado, apples warmed in a skillet with cinnamon and pecans and salmon cakes.  I followed this recipe for the salmon cakes.  Dane doesn’t really care for canned fish but I really liked them.  They reminded me of something my grandma used to make when I was young.

After breakfast, I had to take Teagan to the vet for his annual check up and shots.

IMG_1562 He did a great job and the vet said he is perfectly healthy.  :)

When I got home, Dane and I ran out to do some shopping for the week.  When we got back home, we were ready for lunch.

Lunch

IMG_1569 Hamburger, leftover brussels sprouts slaw and homemade plantain chips.  This was our first time making the chips and I loved them!  So nice to have something with a crunch.  To make them I just peeled the skin away and sliced the plantain thin.  I heated a skillet with some coconut oil and dropped them right in.  A couple of minutes on each side until their brown.  Yum!! I did sprinkle them with salt as soon as they came out of the pan but next time I think I’ll add some spices before they go into the pan.

Right after lunch I headed out to meet Kim and Teri for pedicures.  I have no idea why I don’t have one picture of this but I promise it happened.  We tried out a place that we had never been to before and really liked it.

Dinner

IMG_1574 Scallops in a coconut milk and lime juice sauce with green beans and cashews.

IMG_1575 Along with a side salad.

It’s hard to believe we’re already almost half way through the program!  I’m definitely starting to notice my pants fitting better and yesterday I put a fleece on and noticed right away that it wasn’t as snug as usual.
