Last night we Dane made another recipe from my Best Darn Food Ever cookbook. We typically eat shrimp one day a week but neither of us ever considered making Coconut Shrimp at home. I found this recipe and knew I wanted to give it a try.
As you can see, there aren’t a lot of ingredients but this definitely isn’t lacking in flavor. I’m a big fan of the salty and sweet mixture. We served the shrimp along with a salad and it was plenty of food.
Last night I went to the gym around 8:00pm. I came home from work, ate dinner, put some laundry away and then I got dressed and headed over. That was definitely hard to do. If I would’ve sat down any longer than I did, it would’ve been almost impossible to drag myself out the door. But, of course I was happy that I did. I’ve hit 100% on my ActiveLink every day this week (Since Saturday)!
This is a short post today, so I’ll leave you with a cute picture of my cats right before bed last night.
