Happy Hump Day! I figured this week was going to feel long since I haven’t worked a full 5 day week in awhile and I was right. It feels like it should at least be Thursday. ;)
Normally I go through my whole day of eats but today I want to start with dinner. Dane got me a Cuisinart Food Processor for Christmas and we haven’t had the opportunity to use it yet.
Yesterday afternoon, he sent me the usual “What do you want for dinner?” text. I wasn’t much help, but I suggested fish or shrimp something or other. Then I said, “How about fish, mashed sweet potatoes and sugar snap peas?” He said that sounded good but he was thinking along the lines of shrimp cakes. Perfect, sounds delicious and we’ll be able to test out the food processor.
I was meeting Kim after work to walk the bridge. Dane sent me a text saying that he was going to have plenty of cakes left over, so Kim was welcome to join us. I have no proof of us walking the bridge because it was dark but I promise it happened. :) When we were done we both headed to my house. We walked in to find the house smelling wonderful.
This was definitely up there with one of the best things Dane has ever made. I see many requests for Shrimp Cakes in the future.
I know..you want the recipe, right? I will get that today and hopefully post it tomorrow. He also made a delicious sauce that I’m not posting a picture of because it came out blurry. I was in a hurry to eat. ;)
Ok, so back to the rest of the day. I received a Dunkin Donuts gift card from one of my coworker’s for Christmas that was burning a hole in my wallet.
So, I stopped on the way to work for a Latte Lite.
And the rest of the day consisted of:
46 of these = 4PP. Good luck stopping at 46.
The Chicken Tortilla Soup is almost gone.
This was my first time trying the Black Cherry Chobani. I’m a fan!
I also earned 3 AP’s yesterday according to my ActiveLink.
A friend of mine put a team together for the Orlando Color Run a couple of months ago and when I finally got around to registering, I found out the race was sold out. I sent an e-mail but they confirmed that they were sold out and there was no way I’d be able to race without a bib and a bracelet. Yesterday, I received a text saying that a team member had backed out and they were able to transfer to their registration to me! So, I’m in! I’ll be participating in the Color Run this Sunday in Orlando.

I’m glad you were able to get in on the Color Run!! Can’t wait to hear about it. Last night’s dinner looks delicious! Can you share the recipe for the mashed sweet potatoes too? I’ve tried them before and they never come out looking that good!! Yummy!
I think he uses milk and butter with the potatoes but I will ask him.

I wanted a food processor so badly… When I finally got one, I think it took a few months for me to actually use it! Now I use it all the time. I don’t have to shy away from recipes that require it. And I don’t have a blender since the glass chipped on mine a few years ago, so it is double duty for that, too. You are going to love it!
