Good Morning! If you’ve been reading my blog for awhile, you know that I have a pretty awesome boyfriend. Not only is he a wonderful cook, he puts up with me changing my mind 10,000 times a day and he always listens to my crazy ideas without laughing at me. To my face anyway. ;) Yesterday, I e-mailed him this recipe for Triple Bean Veggie Burgers and told him I wanted to try it soon. He said we had everything on hand, so we could have it that night if I wanted. Awesome, right? I told him I wouldn’t be home until 7:00pm because I was going right from work to Group Power. When I got home, this is what I found.
He did an awesome job. I’m just a tad bit spoiled. He cooked them all in a pan and we each had one with a salad.
I ended up crumbling mine on top. So good and lots of protein after an awesome workout. I kept one in the fridge and froze the rest for another time. The recipe makes 8 BIG veggie burgers.

Yesterday’s breakfast was something a little different..for me. I had a bowl of original shredded wheat (no sugar and 6 grams of fiber) with unsweetened almond milk, half a banana, strawberries and blueberries.
Lunch was quinoa and roasted veggies. On Sunday night I roasted up a bunch of veggies for the week.
I’m still loving these Kiku apples. I haven’t had a bad one yet.
I’m loving Group Power class. I think yesterday was my 5th class and I’m already starting to see and feel a difference. I’ve been wanting to incorporate strength training into my workouts for awhile now, so this class is perfect for me. I have a date with the treadmill tonight.
On Sunday my sister came by with my niece for a bit. Both cats had to check out her stroller.
She thought it was pretty funny that they jumped in there.
She was taking things out of the pantry and came across the bag of cat food. I think Teagan thought he could convince her to feed him again.
Sorry Teag, didn’t work. When she was leaving, I asked her to smile for the camera and I got this.
