Well, it’s been a week since I decided to give low carb a try. I made a couple of half-assed attempts at this diet many years ago, so I wasn’t sure how it would go, but I’m actually feeling really good. I’ve lost 8 lbs! I can’t even tell you the last time I lost 8 lbs in a month much less a week. I also can’t remember the last time I went 7 days without sugar, bread, pasta, rice or any other grain. If I get a craving for something sweet, I’ve been having a small cup of coffee with unsweetened vanilla almond milk and a packet of Stevia.
If you’re familiar with the “Old Atkins,” you might want to check out the newest book.
Some things have changed over the years. It’s considered to be a lot less restrictive.
In the book, you’ll see the authors describing fat as your friend. Their explanation: Fat is a more stable energy source than carbs. Carbs increase the production of insulin, which shuts down your body’s ability to burn fat. So when you limit carbs, you reduce insulin levels and allow for more fat-burning.
I also had a sample of the book Wheat Belly sent to my Kindle yesterday. I’ll talk about it more once I’ve read it.
The one problem I am having is – (sorry for the TMI) – going to the bathroom. I will admit that I’m not eating as many vegetables as I’m allowed, so I need to up them and see if that helps.
Here’s a look at what I ate yesterday.
1 oz. natural almonds
2 frittata muffins
5 green olives and a light string cheese
Chili made w/shredded beef roast – YUM!
Hard boiled egg w/salt and pepper.
When I got home from work I had 1 slice of Boars Head turkey. (unpictured)
Dane made his own version on Chicken Marsala and veggies including broccoli, mushrooms, onions, grape tomatoes, bacon and fresh grated parmesan for dinner. So good.
After dinner I made myself an iced coffee with unsweetened almond milk and a Stevia packet.
Low carb doesn’t have to be all about cheeseburgers without the bun and bacon. :) Although, who doesn’t like those things?
I actually made Dane a batch of cookies on Sunday afternoon and didn’t even lick the spoon. Now, that is willpower!!
I had very good intentions of going back to Group Power class after work yesterday, but my quads (and every other muscle) were still really sore. I decided to wait until Wednesday to return. I just couldn’t imagine doing all of those squats and lunges when sitting down and standing up were painful enough. I definitely don’t want to injure myself.
Right as I was getting off the exit to work, I saw this hot air balloon!
Have you ever ridden in a hot air balloon? I did one time when I was 18 years old and still living in Illinois. It was winter and we landed on the ice! I’m surprised I did because I’m terrified of heights.
Have you read the new Atkins book or Wheat Belly?

I think that you are doing great! I have several friends that have had great results following the Dukan diet, shich id low carb. When I started WW, I decided to do it low carb. I feel great and dont miss them. I do eat some carbs but try to avoid any white carbs. I do know that for your stomach issues Dukan advices eating oat bran. Maybe some fruit in greek yogurt could help too/
It was better this morning. haha
I follow a primal/paleo lifestyle. I think “Wheat Belly” is the perfect companion book for any low carb lifestyle.

I’m looking forward to reading it!
I havent read either one, but you are doing great and i love to see that you are doing this without gorging on fatty bacon and tons of cheese!! Great job!!!!!
Thanks Lauryn
Sounds like you’re doing great! I’d like to give it a try but I’m such a carb girl that I’m afraid I’m setting myself up to fail.
Have you eliminated bread, pasta and sugar completely or cut back severely?
I was a major carboholic, too!
For now, I’ve completely eliminated them.
Oooo….that would be tough. I’m giving it serious consideration, though.
Ihave the book Wheat Belly on my kindle. Gluten free. Wheat is bad for you. Lots of Gluten free stuff out there. I’ve been trying to go Gluten free. They also have Gluten free beer.
