Good Morning and Happy Monday! I hope you had a great weekend. I’m really excited about my Weight Loss Challenge that starts today! I think this is just what I needed to get my butt in gear again. In an effort to mix things up and start losing, I’ve decided to go low carb for awhile. I’m not going to put a time limit on it and I’m not going to give up carbs completely but I am going to limit them a lot more. My doctor actually suggested cutting back on carbs when my triglycerides were high last month.
I did my official weigh in for the challenge on Saturday morning. It had been almost 3 weeks since I stepped on the scale and I was NOT happy with what I saw. I did have sushi the night before, so I may have been retaining some water but regardless – I gained. At one time I was down to 167.2.
In order to hit my 4% for the challenge, I have to lose 7 lbs. (in 28 days) I got this!
We went grocery shopping after I weighed in to stock up on low carb options for the week. Dane made a pot of chicken and veggie soup, I hard boiled some eggs and chopped veggies for omelet’s. The challenge will be getting up early enough to have time to make an omelet before work. I usually bring my breakfast with me and eat it at work.
Dinner last night was pan seared tilapia and roasted veggies.
I’ve been loving roasted veggies lately. I don’t love peppers raw, but they are so good roasted.
I will continue to post pictures of all of my food. Hopefully I will be creative and mix it up and bit, so I don’t get bored. Have a great week!!
Have you ever tried a low carb diet?

Yum!! Dinner looked good! You can definetly loose the 7 pounds!! Im excited to see more of your low carb meals!!
Thank you! I’m feeling good about it. I just had the soup for lunch and it was really good. The hard part will be 3:00pm when I usually crave sugar!
I eat a lower carb menu also. I’m super stoked for the challenge. I really needed a kick in the pants!

You and me both!!
Diet Bet is great! The 4% goal is not too overwhelming and the site is great too. I participated in June with some coworkers and am doing another 4 weeks now with some girls I’m going to Cabo with. I am going to be sad when this one is over. Good luck!
So far I really like it! I’m sure we’ll be doing another one after this one is done if you’d like to participate.
I’m not much of a competitive person so I won’t be participating in the Diet Bet but good luck to all of you who do!! I seem to do better when the only person I compete with is myself
Kim
Thank you, Kim!
I used a low carb menu and kept on eye on my daily calories to lose weight.. I follow a low carb primal menu to maintain my weight.
I’m wishing you lots of success on your weight loss challenge!

Thank you very much!
Hi Kim! I recently found your blog and I’m a first time commenter! Thanks for setting up this weight loss challenge, its just the kick in the pants that I needed to get my booty in gear and relose the weight I gained back. I signed up for the challenge and created a blog to track my progress. http://Www.myslimmerself.blogspot.com I need the accountability, so I will definitely be a regular commenter on your blog. Good luck!
Hi Stephanie! So glad you found my blog and joined the challenge! Good luck!
I have tried the low-carb thing once, and it lasted a week. However, I have seen so many people be successful with it.
What always turned me off was seeing people eat tons of certain types of foods (bacon, cheese, mayo, etc). But, I now understand you can lower your carb intake and still eat “healthy.”
I think the one thing that makes low carb really hard for me is running – I need the fuel. Are you planning on running while decreasing carbs?

I forgot to say – I think your diet bet thing is awesome, and I wish I could join. How about another one in the beginning of the year?
Also – good luck!

I know exactly what you mean..I’m definitely not out to load up on a bunch of fat – just cutting out a lot of the complex carbs for awhile. So far today I’ve had an omlet, light sting cheese, chicken and veggie soup, hard boiled eggs and 2 slices of Boars Head Roasted Chicken.
I don’t know how much I’ll be running, but I’ll definitely be getting some kind of workout in. If I’m hungry, I’ll eat for sure!
The Diet Bet thing is awesome and I’m sure we’ll do it again.
