Prepping is your friend

Good Morning!  Mondays are always a little rough after having 5 days off.  We left Dane’s parents house at 7:30am and got home right around 4:30pm yesterday.  There was a lot more traffic on the road than there was on Wednesday when we left.

It was nice to get home at a decent hour.  We decided to go grocery shopping since we had very little food in the fridge.  We didn’t eat the greatest on vacation, so I wanted to have some healthy choices available for the week.

I remembered that I had this post from The New Healthy bookmarked and decided to prep a few veggie bowls for the week.  I started by roasting red peppers, zucchini, red onion, cherry tomatoes, mushrooms and broccoli.

Then I made some quinoa on the stovetop.

And drained/rinsed a can of black beans.

Just like Stefanie suggested, I started with spinach and the roasted veggies.

The next layer was black beans.

Then quinoa.

On top of that, I added some hummus.

And topped it all off with a little bit more spinach.

Now, I have 3 big veggie bowls ready to go for lunches this week!

I also prepped my overnight oats for the morning.

We had 2 bananas hanging out in the fruit bowl looking pretty sorry.  I meant to freeze them before left, but I forgot.  Instead of throwing them away, I decided to bake something.  I remembered seeing a recipe for Zucchini Banana Chocolate Chip Bread on Courtney’s blog and decided to give it a try.  It instantly smelled amazing and tasted really good, too.

    I am glad to hear you had a nice and relaxing trip. North Carolina is a beautiful state. I love the Blue Ridge Parkway!

      It was really good and has kept me full. :)

      The Blue Ridge Parkway was beautiful…I would love to see it again in the fall.

    I love food prep. It makes me feel in control and sets my mind at ease that I will always have something ready to eat when I want/need it! I *try* and prep all my produce when I get home from the store to make meal prep even easier!
