Quiet night quinoa

Good Morning and Happy Tuesday!  Dane’s sister went back to Connecticut yesterday afternoon.  It was kinda weird having the house to ourselves last night. Between vacation, me being sick and a week long house guest, we’ve been on the go and out of our element for about 3 weeks.

I was happy to welcome back some overnight oats for breakfast.


It was Jill’s moms birthday, so I went out for lunch with them and our friend Brooke.  We went to Caddyshack since it was close to work and we hadn’t been there in awhile.  My lunch choice wasn’t exactly healthy, so I’m not including a picture but it definitely reminded me of Chicago.

I’ve read so much about quinoa over the last few months and have really been wanting to try it.  On Sunday while we were at Publix, Dane and I decided to buy some and last night for dinner, he made pan seared tilapia, quinoa and sauteed veggies.  It was SO good.  I could eat something like this every day.  Everything was so flavorful and light.


I actually ended up mixing all of mine together on my plate.  Doesn’t look pretty but it was delicious.  Smile


I’m looking forward to trying new recipes that involve quinoa, so if you have any favorites, please share!

For dessert, I had a little bowl of Publix Moose Tracks Frozen Yogurt.  It was good, but not as good as the Chocolate Cookie Quarry that I love.


I decided to participate in the June Photo A Day Challenge.  Every month I see friends posting pictures on Twitter and Instagram (username – livinglaughinglosing), so I thought I’d give it a try.


When we were in Pennsylvania on vacation, my sister came by the house every day to check on the cats, feed them and scoop the litter box.  One day she sent me this picture with the caption, “Is my Mom in there?
I thought it was hilarious, so I decided to use it for #4 Close-Up.


I’m looking forward to meeting up with a friend to walk the bridge after work today!  Talk to you soon.

    I am new to quinoa too. How did you prepare yours last night? I have made it using a boxed mix and would love to try some more. Love that Kitty!

    Glad you are feeling better! I love quinoa. Basically, you can use anywhere you would normally use rice. I like it in salad, too. Just plop a scoop on top :)
